The main meal is a huge part of Christmas day, with most families opting for a traditional roast with all the trimmings. Whether it's a turkey, gammon, or something a little different, there's usually a large amount of succulent roasted meat on offer.

However, not much attention is paid to vegetarian meals at this time of year. It's certainly not enough to serve up just a plate of roast potatoes, brussel sprouts and various other vegetables, so often something like a nut roast is an idea that crops up as a bit of an afterthought.

Here's the question: what quick and easy vegetarian dishes can you whip up at Christmas, which are slightly more imaginative than a nut roast? Here are five tasty suggestions that will blow your vegetarian guests away!

1. Why not go for a hearty pie? Either make small, individual pies, or you can make one larger one if you're planning to have several vegetarian guests around your Christmas table. Throw in all sorts of delicious seasonal roast vegetables, chestnuts and seasoning for a meal that's both rich and delicious!

2. Channel the festive theme into your cooking by creating a red and green coloured dish. Spinach and tomatoes (especially sundried tomatoes) always complement each other perfectly, especially with a sprinkling of cheese! Combine them in a tart or roulade to create a fresh, light bite that's full of flavour and seasonal cheer!

3. Pasta is so quick and easy to make, so save yourself time and hassle by serving up a pasta dish on Christmas Day! You could accompany it with a thick seasonal vegetable sauce, make cheesy vegetable stuffed ravioli, or go for something slightly more ambitious like a vegetable lasagne. You can't go wrong with a vegetarian pasta dish, so serving it at Christmas is bound to go down a storm!

4. It can be tough trying to come up with a vegetarian Christmas meal that's nice and tasty as well as filling, but a stuffed aubergine ticks all the boxes. Halve an aubergine, scoop out the seeds, then fill it with a mixture of whatever takes your fancy - anything and everything from mushrooms to nuts to vegetables to rice to lashings of cheese! Bake it in the oven for a short while for a wonderfully tasty meal that will fill your guests right up. The best part about this dish is that one aubergine can easily serve numerous guests - depending on the sizes of their appetites, that is!

5. Chances are that you'll already be planning to cook a whole load of roast vegetables for any meat-eating guests, so make a few more and blitz them together into a fantastic roast vegetable soup. Homemade roast vegetable soup is one of the most flavoursome, healthy things that you can make at home, and with very little fuss. When served up, it may not look like a lot, but this is a surprisingly filling meal that your guests will rave over!
