Autumnal Pumpkin Pie

With winter approaching and the nights drawing in, hearty dishes and warm puddings are becoming all the more appealing. Over the next few months a series of holidays and celebrations will take place, most of which are associated with certain traditional foods. First up is Halloween, which goes hand-in-hand with everything pumpkin-related. As such, there's no better way to celebrate than with a lovely Autumnal pumpkin pie.

Ingredients (to serve six):

450g pumpkin

225g apples

450g diced fruit such as currants and sultanas

110g brown sugar

1tsp mixed spice

1tsp ground ginger

Juice of 1 lemon

340g shortcrust pastry

White of an egg

Small amount of sugar

Method:

Begin by preheating the oven to 200ºC (400ºF or Gas Mark 6).

While the oven is warming up, dice the pumpkin and apple into bitesize pieces. Next, combine together all the ingredients except the shortcrust pastry, egg white and small amount of sugar. Place the mix in a pie dish which measures about two inches deep and which has a diameter of about nine inches.

Cover this mixture with the shortcrust pastry, which should have been rolled out on a lightly floured surface. Make sure that the entire pie is covered with pastry; there should be no gaps, but equally, there shouldn't be any overhang. If you want to, now's the time to decorate the top with leaves (or other shapes) cut from leftover pastry.

Brush the top of the pastry with the egg white, then sprinkle the extra sugar on top.

Bake the pie in the oven for 20 minutes before reducing the temperature to 180ºC (350ºF or Gas Mark 4). Continue baking the pie for another 20 minutes - once it's done the pastry should be golden brown in colour. This delicious autumnal pie is best served warm, alongside a scoop of thick vanilla ice cream!
