Apparently, the reason why Germany has so many different sausages is because each town or region created its own sausage (wurst) variety by adding different spices, herbs or meats. Bratwurst is from Franconia.  

German sausages were originally very complicated to prepare and lusciously flavored. But industrialization led to a drop in standards through mass production. Now a lot of German sausages do not have any recognizable chunks of meat in them the way Italian sausages still do. Yes, I am biased when it comes to sausages.

However, I have not given up on German sausages. It has given me great pleasure in Munich to eat grilled franfurters squeezed into buns and slathered in mustard on a cold winter’s night, especially if it has been washed it down with some mulled wine.

But how do you reproduce that pleasure when you are home with a pack of bratwurst and not enjoying the pleasures of a Christmas night market? I think the answer lies in the way you cook the sausage. Nothing beats charcoal BBQ, but wurst cooked in beer has something going for it.

Brats in Beer

1 pkt Bratwurst (three pieces)

I can of German lager

1 tbsp. each of pepper corns, and mustard seeds (more if you like spices)

1 chopped onion

1 chopped clove of garlic

Put all ingredients together a shallow pan. Simmer for 5 minutes then remove from the heat leaving the Bratwurst to rest in the liquid for about 30 minutes turning a couple of times.  Discard the liquid and grill the wurst until brown on both sides. Serve with a liberal dollop of mustard. This is good accompanied by a thick chunk of  homemade brown bread.

Alternatively, you could use cider rather than beer and add root ginger or other spices. Do not be afraid to experiment with spices as they were traditionally a feature of wurst when the process was in the hands of craftsmen. But do not be tempted to replace root ginger with powdered ginger. It is just not quite right. I tried it once!

Of course, I do have to point out that it is a brown and white meal, so choose some colorful vegetables to go with it, and increase the healthiness of your meal.
