Every cross-cultural experience brings something unique. It’s the same with Bulgarian cuisine. Being on the crossroad between Europe and Asia, Bulgaria can really surprise the visitors. It offers a mixture between two of the best cuisines in the world – Arab and Mediterranean.

If in doubt of what to try when visiting the country, you can never go wrong with the barbecue. There are many options like steak, chicken wings even potatoes, but for those who prefer something more typical, look out for the meat balls. They are called köfte and this is a simple and yet genius dish. If you think it is just grilled minced meat, you are wrong. It is the spices that make the difference. Here is one of the most popular and easy recipes:

Köfte

For 8 servings

1 kg minced meat (it is best to use 60% pork and 40% beef)

1 chopped onion

1 egg

1 slice of bread (soaked in water)

½ cup chopped parsley

½ table spoon dill

Black paper, salt

The single most important thing in this recipe is to mix the ingredients and form the meatballs by hand, so don’t use a spoon, roll your sleeves up and dig in. All of the ingredients should be well mixed together. Prepare meatballs approximately the size of a golf ball and gently press them in the middle to form köftes. Grill every köfte for 4-5 minutes on each side.

 

In Bulgaria it is not only meat. Everybody loves to add some salad to the barbecue. If you’ve ever been to Bulgaria it is almost certain that you tried Shopska Salad:

Shopska Salad

For 8 servings

4 tomatoes

2 cucumbers

1 onion

1 bell pepper

1 cup crumbled white cheese (Feta will do)

Parsley and salt

Dice the vegetables and mix them in a large bowl with salt. Serve them in plates adding crumbled cheese and chopped parsley on top.
