Eat the Globe sat down to have a chat with Erika Chan, the owner of Golden Pig & Co in Sydney (Australia), who produce handmade, wholesome Asian food.


What inspired you to start Golden Pig & Co? How did the name come about?

I love my food and have always been involved in the hospitality industry (I opened the restaurant Mahjong Room with a friend in Surry Hills many years ago).

As my children were reaching primary school age, I started thinking about what I wanted my next career move to be. My passion lies in food, so I started thinking of what options were out there. My youngest daughter, Jordyn, was born with multiple food allergies, and as she was growing up, I really wanted to make sure she wasn't missing out on experiencing the joy of food because of her allergies.

One day, I realised I wanted to solve the problem not just for Jordyn but also for other people out there who were living with food allergies. As such, the idea of Golden Pig & Co was born - we wanted to create handmade, wholesome Asian food that was allergy friendly (ie. gluten-free, dairy-free, egg-free, etc). We decided on dumplings as the main product range to launch with, as my kids really love it. Dumplings are also perfect for time poor people, as they are easy to prepare and eat.

Our company name is quite a personal story, my daughter, Jordyn, was born in the Chinese Zodiac year of the "Golden Pig", and since she was the inspiration for the business, we decided to use "Golden Pig" as our brand name.


What's your point of difference?

We really care a lot about the supply chain and the origin of our ingredients. We look at every single detail, to make sure that our end product is allergy friendly. All our ingredients are clean in the sense that they are organic and so don't contain any pesticides; all our meats come from sustainable sources and are free range. The majority of our ingredients come from Australia.

So, by ensuring the highest quality of ingredients are used, and by creating a unique pastry for our dumplings that are gluten-free, we are providing our customers with wholesome dumplings that are allergy friendly.


What do you consider to be 'authentic' Asian food?

I think that the flavour of the dish needs to be from the culture, it needs to honour the culture that it represents. Authentic food is also about understanding the process or techniques.

So by using either or both (flavour and techniques), people can create their own authentic Asian food. For example, when making dumplings, the technique of how to fold dumplings is very important in ensuring the dumplings taste good in the end.


What are your most popular products? Why do you think they are so popular?

Our dumplings are most popular. We offer a wide range of flavours, and they are all equally popular at the moment. Our customers love the dumplings as they are so easy to prepare and eat. It is also very versatile, it can be a snack or a full meal.

We also launched some new ranges earlier this year, and we're getting great feedback on those too, we launched a "Pho" Bone Broth, and Slow Cooked Beef Cheeks.


What were the challenges in creating dumpling products that are gluten free?

I think it was all about finding the right ingredients and getting the texture right. After that, it was the challenge of trying to get the recipe to work on a large scale.

We're also very rigorous about monitoring the whole production chain to ensure it is gluten-free.


What's the hardest thing about running Golden Pig & Co?

Since our products have no preservatives, we have frozen our products to maintain its freshness. However, the logistics of shipping around frozen products is quite tricky and expensive.


What's the most enjoyable thing about running Golden Pig & Co?

I really enjoy seeing people's faces when they discover they can eat dumplings again - I've had a customer once tell me that they haven't eaten dumplings for 10 years because of their allergies...until they discovered our dumplings!

When customers really appreciate our products, it makes it all worthwhile.

At Eat the Globe, we love to inspire people to try new cuisines and learn about new cultures, what's the top 3 places you would like to visit (whether locally or abroad)? and why?

Locally, I love visiting produce markets, such as the Beaches market (Warriewood), Eveleigh Markets, Marrickville/Orange Grove Markets, Frenchs Forest Markets and Castle Hill Markets.

I also love Spain - it has so many different regions and cuisines, it is a place that is so rich in culture...I especially love the local markets and supermarkets.

Greece is also lovely, especially the south of Greece, such as the seaside villages. The fresh produce is amazing there, such as the tomatoes and cucumbers, the best I have ever tasted! Also, the local dish of char grilled octopus and Ouzo was so good!

We have stockists in Sydney and Melbourne. We can also deliver to outer Sydney via our online partner - Doorstep Organics.

We also offer food service/catering services. Customers are also welcome to purchase directly from our commercial kitchen.

So, what's the upcoming plans for Golden Pig & Co, what's on the horizon?

We really want to let more people know that gluten free dumplings are out there, and that nutritious Asian food exists! We are currently looking to expand by bringing onboard more stockists from interstate.

We are also looking to create more tasty nutritious Asian food dishes, such as a dry pack dumpling kit, as this will allow us to target more of an Australia wide audience, since the dry pack will be easier to ship further.
