The Garifuna are an Afro descendant ethnic group residing in various regions of Central America, Caribbean and the United States. They are also known as garifune or Black Caribs. It is estimated that more than 600,000 are living in Honduras, Belize, Guatemala, Nicaragua, and South America. Actually, the "Garifuna" term refers to the individual and their language, while Garinagu is the term used for the community of people. As I am from Guatemala I'm going to tell the story of the part of the Guatemalan Garifuna food.

My grandmother was a descendant of this wonderful culture and I'm sure that the "seasoning" is also transmitted to the DNA, because my mother cooks in a spectacular way.

While I was growing up I remember those times when my mom cooked Creole food, they were special days not a holyday but it seemed as one, because my house was full of people and most importantly full of smiles. Trust me you could smell the love in the air by simply opening kitchen's door,  that aroma just wraps around you and gives you comfort.

Food is an important part of this culture,  so today I want to bring you a little of that sweet memory that is unforgettable not only in my mind, but also in my palate.

 

Coconut Milk Rice Pudding

 Ingredients:

   1 cup of Malibu (coconut rum)
   1 1/2 cups cooked rice (cold unsalted)
   3 cups whole milk
   1 cup unsweetened coconut milk (well-stirred canned)
    1/3 cup sugar
    1/4 tsp salt
    1/2 tsp vanilla
    
Garnish:
Ground cinammon, raisins and coconut flakes

Preparation:    

Simmer rice, milk, coconut milk, coconut rum, sugar, and salt, uncovered, in a 2 1/2- to 3-quart heavy saucepan over moderate heat, stirring frequently, until thickened, about 40 minutes. Stir in vanilla. Serve cold or warm.
