Healthy Carrot Cake Recipe

I was inspired to make some carrot cake after speaking with the ABC Radio team about their special carrot cake family recipe. After checking out their recipe, I decided I'd attempt to make it a bit healthier (just so I had a good excuse to eat more cake) by tweaking the recipe a bit. I mainly reduced the sugar and oil content from the original recipe and swapped white flour with wholemeal flour. I also omitted the usual frosting/icing on top.

It turned out well - sweet enough, and nice and moist.

Ingredients

  • 3 large carrots
  • 4 eggs
  • 1 cup of sugar
  • 1/2 cup of dried dates
  • 1 cup of vegetable oil
  • 1 cup of chopped walnuts (or any nuts you prefer, such as almonds, pecans,etc)
  • 2 teaspoons of baking soda
  • ½ teaspoon of salt
  • 2 cups of wholemeal plain flour
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla
  • 1/2 teaspoon of nutmeg


Method

1) Preheat oven to 180 degrees for a conventional oven (or 160 degrees for a fan forced oven).

2) Place eggs, roughly chopped carrots, sugar, dates and oil in a blender and blend until smooth.

3) Sift flour, baking soda, salt, cinnamon and nutmeg.

4) Add dry mixture gradually to the carrot mixture along with walnuts and vanilla. Fold in gently, until well combined.

5) Line cake tin with baking paper, then pour mixture in tin gently and bake for approximately 35 minutes or until cooked through.
