Healthy Mixed Berry Cake Recipe

I was on the lookout for a healthy cake with berries as I had a bag of frozen berries I wanted to use up. I ended up modifying a yoghurt berry muffin recipe I found online. I tried to make it healthier by using wholemeal flour instead, I also reduced the sugar and oil.

Ingredients

  • 2 cups of wholemeal flour
  • 2 teaspoons of baking soda/bicarb soda
  • 1/3 cup of sugar
  • 1/3 cup of dried dates, diced (soaked in 5 tablespoons of hot water)
  • 3 eggs, lightly beaten
  • 2/3 cup of vegetable oil*
  • 1/2 cup of natural/Greek yoghurt
  • 1 teaspoon of vanilla extract
  • 1/3 cup of rolled oats (or traditional muesli)
  • 1 cup of frozen mixed berries

*Vegetable oil can be substituted with coconut oil (if using coconut oil, melt the coconut oil gently in the microwave, so it is in liquid form so it can be easily combined with the other ingredients).

Method

1) Preheat oven to 180°C (350°F).
2) Combine the sugar, flour and baking soda together, ensuring the baking soda is evenly mixed into the mixture.
3) Then add to the mixture the dried dates (and soaked water), eggs, oil, yoghurt, vanilla, and mix until just combined.
4) Gently fold in the oats and mixed berries.
5) Bake in a 12 muffin tin or alternatively, bake in a rectangular cake tin.
6) Bake for 25–30 minutes, until it is golden and cooked through (insert a skewer and remove, and if no batter sticks to the skewer, then the cake is cooked).
7) Place onto a wire rack to cool.
