We all love dipping our Oreo cookies in a cup of fresh milk. Every time the scenario is the same: you were going to have just one or two at the most, but before you even realize it, the pack is already finished and you are left wanting more. So imagine this: a huge cheesecake full of these delicious cookies, so creamy, melting in your mouth! Yummy! I had to cross the globe to finally discover the best dessert on earth. It was at the Saints Restaurant in Hanmer Springs, New Zealand where I found this delightful cheesecake. Every week I would go and order the cake after enjoying the nice hot springs that are surrounded by magnificent mountains. After leaving Hanmer Springs I just couldn’t wait to eat this dessert again, so I decided to try to make one on my own. After a few trials, I finally got very close to the original taste. Here is the recipe I want to share with you and I really hope you’ll love it as much as I did. Bon Appetite!

For 16 serves

Preparation 30 min – Rest 12 hours in the fridge

Ingredients:

Crust:

175 g of Oreo cookies, finely chopped

30 grams of brown sugar

60 g of melted butter

1 table spoon of cinnamon

Filling:

450 g of cream cheese

460 g of sour cream

150 g of sugar

4 large eggs

1 tbs of vanilla extract

25 Oreo cookies, crushed

4 cubes of chocolate, melted and drizzled

Preparation of the crust:

Mix Oreos, butter, cinnamon and brown sugar together in a bowl. Get a 9” spring form pan and press the crust on the bottom of the pan. Set aside.

Preparation of the filling:

  1. Crush the Oreo cookies in a large bowl. Set aside.
  2. Mix together cream cheese and sugar until it gets light and fluffy.
  3. Add one egg at a time while you keep beating.
  4. Add the vanilla extract.
  5. Slowly add the sour cream and mix until blended.
  6. Add crushed cookies to the mix and stir with a spoon until you get a homogeneous mix.
  7. Pour the mix into the spring pan.
  8. Melt the chocolate cubes and use it to decorate the cake, you can even use a few Oreo cookies to put on top of your cake.
  9. Place in the refrigerator for at least 12 hours.
  10. Invite your friends for a coffee and enjoy your delicious cake!
