There are a lot of foods I miss from the States and it’s always been that way. For many years, food cravings were the hardest part about living abroad (which I’ve done for most of my adult life). That’s shifted and changed, especially as visits with children aren’t something you can do at the drop of a hat – but I still get them.                            

And, when I landed in Joburg all those years ago, the biggest challenge was the lack of Mexican food – or Tex-Mex styled dishes. There were virtually no tacos, fajitas, enchiladas, or burritos to be had. When I could get them, I was overwhelmingly disappointed. It was as if something was lost in translation – when changes for locally available ingredients had to be made, the wrong decisions were made time after time.

You shouldn’t even get me started on the despair caused by the nachos offered anywhere in the city (then or now), they’re unpalatable.

For a few years, there was nothing close enough to Mexican food to even venture out to pretend. Hard times, I must say (especially when pregnant and the food cravings were amplified)!

There is an upside to the years of disappointing Mexican food in Joburg… I have a repertoire of recipes that are easily the most requested meals in my house. I make tacos and burritos regularly. My layered-dip nachos are such a family hit that my younger son does more than request them – he makes them himself (he’s 11, in case you’re wondering). Now, my chicken enchiladas (loosely modeled off the old Don Pablo’s version) do take quite a bit longer to make, so they’re on the rotation less frequently (and I always need to make a double batch for the freezer). And, I’ve also been known to make Mexican pizzas (both proper Tlyaudas and the Taco Bell variety) from time to time.

The point is that I make a lot of Mexican (or Tex-Mex, as the case may be) and my kids tell me the same. (And, you have to believe them when they clear their plate without question.)

But, sometimes, I would rather someone else just indulge my Mexican food cravings.

How lucky I am that a new restaurant, Mexican Fresh, opened a few years ago – and not far from my house? Well, I would be if my family thought their food compares to mine. They would rather I make Mexican than order it from the restaurant down the street (even though their food is exceptionally good).  

Still, every now and again, I manage to convince everyone that I need Mexican that I don’t make – and we get these goodies. And since I’m not planning to open my house for diners, I can tell you it’s the best Mexican you’ll get in Joburg.
