Italian Cooking Demonstration With Tom Kime

The thing I most admire about a chef is their passion for what they do, and their passion for food, and they generally have a great sense of humour. Tom Kime definitely ticked all these boxes.

The cooking demonstration was part of the Sydney Food Festival (Oct 2009), and included a demonstration of 8 Italian dishes and the tasting of these dishes. Tom gave many handy tips as he cooked each dish. Tom took us on a vicarious journey through Italy as he explained the origin of certain ingredients, the passion of the Italian people for their food; such as how to cook "real" Italian risotto.

Cooking demonstrations are a great way to improve your knowledge of food and cooking, and this particular demonstration was nice as it was relatively intimate, as there were about 30-40 people in the room, which gave the audience a chance to interact with Tom and ask questions as he cooked.

Overall, the taste of all the dishes was good, I especially enjoyed the crostini starters and the pork loin cooked in milk. Also, the risotto texture was very nice, however, I found the flavour a bit too sour. The dishes demonstrated as part of the class included: Crostini with Fig, Fennel and Parmesan; Crostini of Crushed Broad Beans with Mint and Pecorino Served with Marinated Mozzarella; Salad of Grilled Broccoli with Gorgonzola, Walnuts and Shaved Pecorino; Minestrone Prima Vera Green Spring Soup with Pesto; Crab and Fennel Risotto; Pork Loin Cooked in Milk with Lemon and Sage; Braised Artichokes with Peas and Mint; Ravioli di Carnalivari.
