Lemon Chicken Tagine

The flavours in Moroccan cooking are really special and fruit features heavily in tagines and other dishes. This Moroccan Lemon Chicken Tagine is delicious and full of flavour. It also freezes really well so is perfect for cooking ahead. This serves 4-6 people.

Ingredients:

1 medium chicken cut into 8 pieces or 6 chicken breast portions

1 teaspoon ground cumin

2 teaspoons paprika

1 reaspoon cinnamon

1 teaspoon turmeric

120g canned chickpeas

2 garlic cloves

2 tbsp olive oil

1 onion, sliced into small pieces

75g raisins

2 lemons, cut into quarters

freshly ground black pepper

1 glass white wine

600ml vegetable stock

chopped coriander and parsley

200g olives

First dry the chicken pieces. Blend all the spices together and coat the chicken pieces with them. Allow the chicken to marinate for 2 hours in the fridge.

Heat the olive oil in a large pan and add the chicken. Cook the pieces for 8 minutes or until browned on all sides. Add the onion and garlic to the mixture. Cover the pan and cook the mixture for 15 minutes.

Add the wine, lemons, chickpease, stock , raisins and olives to the pan and simmer the mixture for 45 minutes. Stir the food regularly so all the chicken pieces are cooked well.

Mix the coriander and parsley together and add them to the mixture. Serve the tagine with couscous or rice.
