Palazzo Bontadosi  is a restored palazzo. It is now a tastefully decorated boutique hotel in the central piazza in Montefalco. There are many reasons to visit Montefalco and this hotel is definitely one of them. Each room has a specific kind of charm and a special view. The decor is quite fabulous and there is a spa in the basement that is worth a visit. It is like descending into a mysterious grotto. You are powerless to resist the forces drawing you down into the underworld like Eurydice.

But there is another reason to visit the hotel now with the opening of Locanda del Teatro, the new restaurant run by chef Paulo. Paulo already has a reputation for fine cuisine as, until recently, he ran Redibis in Bevagna. This restaurant was inside an ancient Roman amphitheater so it was quite an experience to dine in such a spectacular monument.

However, at time of writing, the whole Orto degli Angeli complex that Redibis was part of is up for sale - a 14 bed hotel, a lovely garden and part of the Roman amphitheatre - yours for €12 million!

Anyway, Paulo has moved on and it will be Montefalco’s gain. He is a handsome, silver-haired Italian man with a passion for food and a seductive accent. He will be an even bigger success than he already is, I am sure, at Locanda del Teatro.

Like the hotel, the restaurant is utterly tasteful, however it is quite small. Additional tables will be set up under umbrellas so that diners can spill out into the piazza.

The official opening offered local foodies and other lucky visitors a chance to taste the simple pleasures of eating and drinking in an Italian Piazza on a summer's evening.

Prosciutto, panzanella and risotto were served to a cast that included monks, Italians, American and New Zealand visitors and former New Zealanders now living in Italy.

Four wineries were present offering their best wines and lovely waiters drifted by with platters of the best focaccia I have eaten in Italy.

Now I have to have a moan about Italian bread. In Umbria, it is just not that nice most of the time. The wheat variety is quite hard and on top of that they do not salt it, a tradition started way back to avoid a Papal tax on salt.

Now that Locanda del Teatro is open, I will have to try it, so watch this space, as I will report on it, you can be sure.
