Pesto Parmesan Snacks Recipe

These pesto and parmesan snacks are quick and easy to put together and that makes them the perfect party snack or appetizer. 10 minutes in the oven and less than 10 minutes prep time and you can serve them to your guests.

I mentioned in my previous article, the one with the Chocolate Crinkle Cookies Recipe, that I hosted a Christmas party recently and I baked all kinds of treats. I love to bake and cook for my friends and this year I decided to try some new recipes besides my go-to recipes. I spent more than six hours in the kitchen but I was very happy that my friends loved everything I baked. I chose simple and quick recipes that make tasty treats because I wanted some variety of treats on the plates. Besides these pesto and parmesan snacks, I also made some pigs in the blanket. I will post the recipe if I find some decent pictures.

As for the sweet treats, I made the chocolate crinkle cookies that I already mentioned, some mini-tarts (recipe coming soon) and some chocolate thumbprint cookies. I didn’t get a chance to take a picture of the thumbprint cookies but maybe I will make another batch for the New Year’s Eve when I will have some guests over.

Ingredients

1 sheet puff pastry from the grocery store

4 tablespoons green pesto

2 tablespoons grated parmesan

Method

The first thing you have to do is to defrost the puff pastry. When the puff pastry is ready to use, preheat your oven to 200° Celsius. Then line a baking tray with parchment paper. If you can use two baking trays in your oven, line two. If not, bake one at a time.

Unroll the puff pastry and cut it into four equal-sized rectangles (width way). Spread the pesto on two of the rectangles – two tablespoons on each rectangle. Grate the two rectangles with one tablespoon of parmesan. Place the rectangles that have no pesto and parmesan on top of the ones that have and press down gently. Cut each rectangle in four and then cut them in half and twist them. You can leave them like this to have some thin pastry straws or you can cut them in half again to make them bite-sized. I decided to make them bite-sized because it is easier to eat them at gatherings. After you finish cutting and twisting, place them on the baking tray and bake them in the oven for approximately 10 minutes.

Remove them from the oven and garnish with one tablespoon of parmesan.
