Rich Chocolate Cheesecake

Cheesecake is a wonderful dessert, as there's so much scope for variety with it. Uncooked or baked, fruity or chocolatey - there's so much you can do with cheesecake! Cheap, poorly made versions can end up with a cheesy undercurrent running through the flavour. Although this is unsurprising when you consider the ingredients, it's not always the tastiest.

I have a recipe which doesn't have any of this cheesy hint. Instead, it's rich, smooth and wonderfully decadent. Try it - you can thank me later!

Ingredients:

100g chocolate covered biscuits (almost any will do, but digestives are my favourites)]

50g butter

200g chocolate (it doesn't have to be anything special - most recently, I used a mixture of 70% cocoa chocolate, cooking chocolate and leftover Easter egg chocolate!)

200g cocoa powder

300 ml double cream

250g soft cheese

250g mascarpone

Method:

1. Take out your frustration on the biscuits by smashing them up into tiny crumbs. Meanwhile, melt the butter in a saucepan, then add the biscuit crumbs.

2. In a separate bowl, place the chocolate, which should be broken into small pieces. Boil some water in a saucepan, then place the bowl containing the chocolate on top. Remove the pan from the heat and set it aside; the residual heat from the water will be enough to melt the chocolate, without letting it burn.

3. While the chocolate is melting, you can crack on with the rest of the cheesecake mixture. Beat together the double cream, soft cheese and mascarpone. Speaking from personal experience, I would recommend using a mixer for this, rather than doing it by hand!

4. Once the mixture is thick and smooth, pour in the melted chocolate. Stir it in well, then add the cocoa powder. Make sure that everything has been combined very thoroughly; you shouldn't be able to see any residual cocoa powder.

5. Line a 20cm/8in springform cake tin with non-stick baking paper. Press the biscuit-butter mix into an even layer across the entire base of the tin. Spoon the cheesecake mixture over this biscuity base, and smooth it out.

6. Finally, place it in the fridge to chill for several hours at a minimum. Remove the sides of the tin and the baking paper before you cut a big slice and enjoy!
