Stained Glass Window Cookies: Handmade Edible Christmas Decorations!

From buying and wrapping the presents, to decorating the tree, to sorting out the main Christmas meal, there's so much to do at this time of year. Sometimes it's helpful to cut a few corners and save yourself a bit of work, and these stained glass window cookies can help you do exactly that. By spending just a few hours in a productive way, you will end up with gorgeous baked goods that can double up as hanging decorations, Christmas gifts and even snacks for the day itself. What more could you want?

Ingredients (to make 12):

175g plain flour

1/2tsp bicarbonate of soda

1/2 tsp ground cinnamon

1/2 tsp ground ginger

75g butter, diced and softened

75g caster sugar

2tbsp golden syrup

1 egg yolk

150g boiled sweets - sometimes known as hard candies, these must be clear

Method:

Sift the flour, bicarbonate of soda, cinnamon and ginger into a large bowl, then add the butter. Get stuck in and use your fingers to gently rub the butter into the mixture, until it resembles fine breadcrumbs.

At this point, you should add the caster sugar, golden syrup and the egg yolk, and combine them thoroughly. The mixture should start to come together after a couple of minutes - it should look more like a dough than a cake mixture.

Turn this doughy mixture out and knead it thoroughly, until it is smooth and even. Wrap it in clingfilm and place it in the fridge for half an hour.

Meanwhile, preheat the oven to 180ºC (350ºF or Gas Mark 4).

Once it has cooled properly, remove the dough mixture from the fridge and roll it out on a lightly floured surface until it measures approximately 1/2cm thick. Use a Christmas themed cookie cutter to cut out 12 shapes from the dough; if you have any scraps of dough left over, knead them together then roll them out again to give yourself more room to cut out even more shapes! Use a smaller cookie cutter to cut a shape from the centre of each cookie - this can be the same as the outer shape, or something completely different!

Use a knife to make a small hole at the top of each cookie, then place them all onto a lined baking tray. Place them in the oven to bake for around five minutes.

Next, take out your stress on the boiled sweets by crushing them! Using a rolling pin or a similar heavy object will help - you want them in small chunks, but don't turn them to dust!

Remove the cookies from the oven and place about the volume of two crushed sweets in the hole in the centre of each cookie. At this point you can have fun with flavours and colours to create different effects.

Once you've filled all the cookies, return them to the oven for another five minutes. By the end, the cookies should have cooked and the sweets should have melted. If they haven't quite filled their holes, then use a knife to delicately press them to the edges while they're still warm.

Leave the cookies to cool before removing them from the baking tray. You can then tie some string or ribbon through the holes at the top to create beautiful hanging decorations for the tree or your windows. Of course, once Christmas Day comes, you can take them down and eat them, which means there will be even less to clear up!
