The Dessert of Love: Indulgent Chocolate Mousse

As we’re celebrating everything love-related here at Eat the Globe this month, it simply wouldn’t be possible to ignore two very important foodie favourites: chocolate and dessert. To many people, these two words conjure up images of love and desire and if that doesnt apply to you, then you must be living on another planet!

When you combine the two together, what do you get? Indulgent chocolate mousse: the dessert of love.

Homemade chocolate mousse is so much better than the plastic stuff that you can buy off the shelf in any supermarket. If you make your own, it tastes fantastic; not only that, but pouring your time and effort into it makes for a dish that’s truly filled with love. That’s something that money simply can’t buy, no matter how rich you are!

The good thing is that chocolate mousse is incredibly easy to make at home, but it will impress all your friends and family. With this recipe, you can either keep it rich and chocolate-y, or you can introduce a hint of another flavour to add an interesting twist.

Ingredients (to serve four):

150g dark chocolate

2 large eggs

35g golden caster sugar

75g whipping cream

Flavourings (optional) a few drops of orange juice, peppermint extract, liqueur, coffee, or even a small amount of finely chopped chilli

Method:

Break the chocolate into small pieces and melt it in a bowl over a pan of simmering water. Make sure that the bowl does not touch the water, or the chocolate will burn.

Once the chocolate has melted and become smooth and creamy, remove it from the heat. If you’re using another flavour, then add it in at this point keep tasting to make sure it suits your tastebuds!

Meanwhile, in another bowl, separate the eggs and whisk the whites until soft peaks form. Gradually add the sugar; you want it to be mixed thoroughly, but be careful not to stir the mixture too much. At this point, the egg whites are still very light and fluffy, which is exactly the quality that you want to transfer to your mousse. Too much mixing will just knock the air out, making your mousse more like a dense cream, which isn’t exactly ideal!

Once it’s all been mixed, take a spoonful of the sugar-egg white mixture, and spoon it into the melted chocolate. Stir it carefully the point of this is to lighten the chocolate so that it doesnt sit too heavily. Next, pour all of this chocolate mix into the rest of the egg whites, and stir it together very carefully. Once again, be very careful not to knock too much of the air out.

The last step is to stir in the whipping cream this will give the mousse a smooth, creamy texture.

Either pour it into a single mould, or divide it up into four separate cups or bowls for individual portions (which is my preferred technique). Whichever you choose, place your mousse in the fridge to set. Leave it for as long as possible, but certainly no less than a couple of hours.

When you can resist no longer, serve it with a big spoonful or whipped cream, and indulge in the rich, extravagant dessert of love!
