There are hundreds of different types of sausage in Germany.  Some are found in delicatessens, others in restaurants and street food stands, whilst some sausages are unique family recipes. Here is a short guide to some of the more popular wursts in Germany.

Bratwurst

This is one of the more common varieties of sausage and is found all over Germany. It is made from minced pork and often served with a large dollop of mustard in a bread roll. This is a popular snack found at street food stands.

Thuringer Rostbratwurst

This sausage comes from the Thuringen region of Germany and has some distinctive flavourings. The spices that are used in making this sausage are usually caraway and marjoram but some varieties also include garlic. Usually these sausages are grilled and are characteristically quite large.

Frankfurter

Also known as a Bockwurst the Frankfurter sausage originated in the city of Frankfurt. This is made from pork and veal and served with mustard just like a hot dog. Food stands sell these all over Germany.

Knackwurst

These stubby plump sausages are sometimes smoked and are made from beef and flavoured  with garlic. Commonly seen in restaurants across Germany these are served with that other German favourite dish – sauerkraut, together with potato salad.

Teewurst

Teewursts are air dried sausages that are smoked over beechwood. This variety was invented in 1874 Karoline Ulrike Rudoph, and was designed to be eaten at tea time. Some of the teewursts are spreadable and go down well with a slice of bread.

Weisswurst

A weisswurst comes from Southern Germany and is a traditional looking sausage made from veal and bacon. Usually the flavourings come from onion, parsley, cardamom, and lemon. This sausage is traditionally eaten without the skin and usually before noon as it contains no preservatives. It goes well with beer, pretzels and mustard, which sounds a bit odd before noon – but when in Rome…..

Gelbwurst

This yellow sausage has a casing coloured with saffron and is also spiced with mace, ginger, lemon and cardamom. Gelbwursts can be made from pork, chicken, beef or bacon. At one time it was made from brain but this is no longer the case. It is often served cold along with other sausages like liverwurst.

Leberwurst

A leberwurst sausage is generally made from pig with chopped liver. It is one of the spreadable sausages and can be flavoured in different ways. Varieties on this theme include the kalbsleberwurst which is a sausage made from calf’s liver. A spreadable pork liver sausage that is smoked is the popular Braunschweiger. These are great for lunches, snacks and picnics and are found all over Germany.

A visit to Germany is likely to result in an encounter with one or more sausages which are a culinary specialty here. Do spend time tasting the many varieties of sausage found in the delis and markets to get an idea of the cuisine. Wursts are some of the best food found in Germany.
