What Is Raclette?

Pronounced ruck-lett in English, raclette is a type of cheese and also a type of dish. The dish consists of melted cheese traditionally served with boiled potatoes with pickled onions and small pickles or gherkins, as they are called in UK and some parts of Europe.

The method of melting the cheese to make raclette changed over time, initially the cheese was melted near the fire, now most people prefer to use Raclette grills to make the dish but the most important thing to know about making this dish is that the ingredients are the essential part as in the case of all dishes that use only a few ingredients.

Raclette is perfect for family gatherings or evenings at home with friends and fun activities along cherry liqueur, white wine or herbal tea.

Origin Of Raclette

The cheese originated in Switzerland, somewhere in valleys of the Swiss Alps and now it is amongst the most loved types of cheese in the country. However, raclette cheese is also popular in other countries, such as Germany, France and other European countries that love cheese dishes.

The idea of transforming raclette into a meal also originated in Switzerland. The local farmers used to melt cheese near the fire and due to the divine taste of melted raclette the idea caught on amongst other groups of people and it evolved into the dish that has the same name.

Melting raclette is probably the most popular way to eat this tasty cheese, the heartiness, simplicity and divine taste of the meal is what most people are looking for in a cheese dish. But, another loved and simple way to enjoy raclette is by transform the cheese into a classic cheese fondue. This is also an interesting way to make raclette interactive since it allows people to combine cheese with ingredients of their choice.

Raclette Recipes

In case you want to make raclette, the dish, or simply taste the cheese and put your own spin on the classic recipe, we highly recommend the raclette cheese from Switzerland, the one that comes from the alpine villages in the Swiss Alps since that is the best one. The flavor is quite distinctive and the melting qualities cannot be compared with the raclette made in other regions.

Traditional Raclette Recipe

Ingredients:

8 small or medium potatoes

700 gr Raclette Cheese

4 thin slices of Buendnerfleisch (air-dried beef from Swiss Alps) – optional

1 small jar of pickles

1 small jar of pickled onions

Pepper

Paprika

Instructions:

Wash potatoes (leave skin on) and boil them in salted water for approximately 20 minutes. Test the potatoes with a fork or knife to see if they are cooked through. When ready removed them from water and keep them warm in a covered bowl.

Arrange the pickles, pickled onions and the Buendnerfleisch slices on 4 plates. Place 2 potatoes on top of the plates arrangement.

Heat up the raclette grill for 5 minutes. In the meantime remove the rind of the raclette cheese and cut it into very thin slices and place them into a pan. Melt the cheese by placing the pan under the raclette grill.  It usually takes 2 minutes to obtain a creamy consistency and 3 minutes for a crispier consistency.

Use a wooden spatula to scrape the cheese out of the pan and place it on top of the potatoes after you slice them with a fork. Season with pepper and paprika.

Other Raclette Ideas

You can add a Hawaiian twist to raclette cheese if you add ham slices to a pan, then you put some pineapple slices on top of the ham and then you cover everything with raclette. After that, use the raclette grill until the cheese is melted. Serve with French baguette.

You can also use raclette for pizza, toast and even quesadilla. Raclette melts perfectly so it is great in dishes with melted cheese.
